I promise you’ll love this pudding. It is cute, colorful, perfect for sharing with your friends, really easy to make and the finished chia pudding looks amazing. On a warm day, this puddings go really well with a glass of refreshing lemonade, best enjoyed on a chair in the sunshine.

Ingredients (4 serves)

Chocolate layer:
500ml low-fat milk
1tbsp maple syrup
2tbsp cacao powder
6tbsp chia seeds

Raspberry layer:
500ml low-fat milk
1tbsp maple syrup
140g raspberries
6tbsp chia seeds

To serve:
Raspberries
Shredded coconut

Preparation
1 To make the chocolate layer, whisk the cacao powder, maple syrup and milk together in a bowl. Add the chia seeds and stir until well combined. Cover with plastic film and refrigerate overnight until set.

2 To make the raspberry layer, place the raspberries and half of the milk in a high-powered blender and blend until smooth. Add the remaining milk and maple syrup and pulse a few times to combine. Place in a bowl, add the chia seeds and stir until well combined. Cover with plastic film and refrigerate overnight until set.

3 To serve, evenly spoon the chocolate chia pudding into 4 glasses and evenly top with the raspberry chia pudding. Top with raspberries and sprinkle over the coconut.
