Healthy parfaits are one of my favorite things to make for breakfast since they are not only super filling and full of nutrients, but they also look and taste absolutely amazing. It almost feels like I am having dessert for breakfast – does it get much better than that? Well maybe if I had actual dessert for breakfast. Parfaits might seem like a lot of work, but they are actually really easy to make and they usually do not take much time to prepare either.
Here are a few of my favorite Parfaits. I hope you like it as much as I do!
Pink berry Parfait with peanut butter, granola, kiwi & goji berries
INGREDIENTS
1 SMOOTHIE LAYER
• 1 banana
• a large handful frozen raspberries
• 1 tb goji berries
• 1 tb matcha powder
• a splash of almond milk
• stevia
2 SMOOTHIE LAYER
• 1 banana
• a handful frozen strawberries
• 1 tb baobab powder (optional)
• a splash of almond milk
• stevia
PREPERATION
1 Mix the first and the second smoothie layer separate in a blender
2 Make sure the first smoothie layer is the thickest or you won’t be able to keep the two layers separated
3 Pour the smoothie into a bowl and add peanut butter, granola, kiwi & goji berries
4 ENJOY!
Colorful raspberry Parfait with yoghurt, granola & fresh fruits
INGREDIENTS
• 1 cup frozen raspberries
• 2 tb goji berries
• 1 tb hemp seeds
• a splash of almond milk and yoghurt
• 1 banana
PREPERATION
1 Start by making the smoothie by adding the frozen raspberries, goji berries, hemp seeds, banana and almond milk to a blender and pulse until smooth
2 Pour the smoothie into a bowl and top it with yoghurt, granola & fresh fruits
3 ENJOY!
Purple blueberry Protein Parfait with muesli, yoghurt, blueberries & whey protein
INGREDIENTS
• 1 cup frozen blueberries
• 5 tb muesli
• 30 g whey protein (I use the Iso Pro Protein from Myprotein which is natural in taste)
• a splash of almond milk and yoghurt
• 1 banana
PREPERATION
1 Mix the banana, blueberries, whey protein and almond milk in a blender
2 Pour the smoothie into a bowl and top it with yoghurt, muesli & mixed berries
3 ENJOY!
Red strawberry love with yoghurt, granola & honey
INGREDIENTS
1 SMOOTHIE LAYER
• 2 bananas
• a large handful frozen strawberries
• 2 tb goji berries
• 1 tb vanilla powder
• a splash of almond milk ans yoghurt
• stevia
PREPERATION
1 Simply blend all the smoothie ingredients (instead of the yoghurt) – make sure that the layer is thick
2 Pour the smoothie into a bowl and add yoghurt, granola, strawberries & honey
3 ENJOY!
Homemade honey crunch granola
INGREDIENTS
• honey
• rolled oats
• chopped almonds
• sunflower , flax & chia seeds
• raisins
PREPERATION
1 I simply melt some honey on a pan on medium/high heat and add rolled oats, chopped almonds, sunflower seeds & chia seeds and stir it well until everything is well mixed and lightly coated in honey
2 Turn the heat down to low/medium, stir well every two minutes until the granola is toasted and lightly golden
3 Let the granola cool down (I usually pour it onto a piece of baking paper) and mix in ground flax seeds and raisins. Keep it in an airtight container, it can keep for 1-2 weeks
